Dropping Acid: The Reflux Diet Cookbook & Cure

While I do not suffer from acid reflux, I’m all for healthy eating and balanced diets. So when I received an invitation to an event at the French Culinary Institute to learn about the intriguingly named, Dropping Acid: The Reflux Diet Cookbook & Cure, I happily signed up.

Held by French Master Chef at FCI, Marc Bauer, and Founder of Voice Institute of New York, the world’s leading voice and reflux treatment center, Jamie Koufman, we learned about acid reflux and how to prevent it while watching Chef Bauer make some of the simple recipes from the cookbook.

All foods rank on the pH scale as high or low acid. Foods like tomatoes, onions, chocolate, coffee, and wine, rank as highly acidic. The best foods include oatmeal, whole grains, bananas, fish, olive oil, and tofu. As Dr. Koufman explained, one reason why millions of Americans of all ages suffer from acid reflux can be tied to Title 21, a law passed by Congress in 1973. In order to safely preserve packaged foods and beverages, more and more foods became highly acidic. Now, as a leader in this field, Dr. Koufman personally sees and treats the consequences of people eating a highly acidic diet.

Dr. Koufman and Chef Bauer created the Reflux Diet to help treat sufferers and bring down side effects. We sampled easy recipes such as Asian Tuna Tartare, a Pea Shooter with Sautéed Porcini, and Ginger and Pumpkin Cheesecake on a Polenta and Fresh Corn Crust. So far, I’ve also made a Broccoli and Mushroom Risotto and the Calm Carrot Salad on my own at home. I like that I usually have the ingredients to most recipes in my kitchen or are something I would normally buy.

The recipes not only are easy and delicious but healthy and low-risk for sensitive stomachs.
