How much chicken?

Wednesday, December 1, 2010 - 4:00pm
Chicken fried rice

Many chicken recipes call for shredded or chopped chicken in cup measurements.  Ever wonder just how much chicken is one cup (or more)?

I am here to tell you (or rather, the Dinner Doctor will tell you).

1 cup = 1 small boneless half breast (about 4 ounces), one quarter of a whole chicken

2 cups = 2 small boneless half breasts, 1 large boneless half breast (about 8 ounces), half of a whole chicken

3 cups = 3 small or 1.5 large boneless half breasts (about 12 ounces), three quarters of a whole chicken

4 cups = 4 small or 2 large boneless half breast (about one pound), 1 whole chicken

Now get cooking!
