I love peanut butter. Smooth, creamy, chunky? Yes, please!

March 1st was National Peanut Butter Lover’s Day - a whole day devoted to Washington Carver’s tasty discovery. As a peanut butter enthusiast, I want to share one of my favorite peanut butter recipes with you.

If your child loves peanut butter as much as I do, these will wash down with a nice glass of milk in no time! If sharing with any neighborhood children or your child’s classmates, please be aware of peanut allergies!

Peanut Butter Cookies

From Betty Crocker

Makes 30 cookies

Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients.
  2. Cover and refrigerate about 2 hours or until firm.
  3. Heat oven to 375ºF.
  4. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet.
  5. Flatten balls in crisscross pattern with fork dipped into sugar.
  6. Bake 9 to 10 minutes or until light golden brown.
  7. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.

I made a batch last night and

I made a batch last night and they came out pretty good! Soft and chewy. I'm guessing if you want a hard cookie, leave it in the oven for a few more minutes?

Just wondering if they are

Just wondering if they are soft and chewy, or more of a hard pb cookie?
