Mixed Berry Cobbler
Even with all the holiday baking going on, there are times when you want to make something quickly with minimal fuss or preparation. When that’s the case I like to make a cobbler.
Cobblers are perfect to take to a potluck or when you’re having friends over for dinner. Put it in to bake as guests arrive. By the time it’s done, you should be ready for dessert.
This recipe is inspired by the bag of frozen berries I found during a freezer reorganization, and the Challenge Dairy European Style Butter I was trying out. It’s based two recipes: Easy Blackberry Cobbler and Raspberry Peach Cobbler.
Mixed Berry Cobbler
Ingredients:
- 1 qt. (4 cups) mixed berries of your choice or peaches (If you’re using frozen berries or fruit, defrost and drain the extra juice.)
- 1/2 cup sugar
- 1/2 cup whole wheat flour
- 1/2 cup all purpose white flour
- 1/2 cup (1 stick) of Challenge Dairy European Style Butter
- 1 c. skim milk milk
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- 1 pinch salt
- 1/2 tsp. cinnamon
Directions:
- Preheat oven to 350 degrees F.
- Melt butter in 13 x 9 inch pan. Put the timer on and check every 10 minutes so you don’t forget and accidently burn the butter.
- Combine sugar, flour, milk, cinnamon, vanilla extract, salt, and baking powder.
- Pour mixture over melted butter.
- Sprinkle in berries (do not stir) with your hand. Make sure the berries are evenly placed all over the dish.
- Bake 1 hour or until the crust is golden brown.
- Serve warm with a dollop of vanilla yogurt or vanilla ice cream.
