Spanish Rice 101

Spanish Rice
Ingredients:
- 1 cup Basmati white rice (you can use any white rice but I find that Basmati gives this a nice flavor)
- 1-2 Roma tomatoes (depending on size of tomatoes and how much tomato flavor you like), cut into large chunks
- 1/2 medium size onion, cut into large chunks
- 2 garlic cloves
- 2 tsp of chicken bouillon (my favorite is Knorr's Caldo de Pollo)
- 2/3 cup of water + 1 cup of cold water
- olive oil
Directions:
- In medium size bowl/container, blend tomato, onion, garlic cloves and 2/3 cup water. Set aside.
- Brown rice in small amount of olive oil.
- Add liquid mixture to rice and heat until liquid mixture is absorbed into rice, stirring occasionally.

Once liquid mixture is absorbed into rice, add 1 cup of cold water and chicken bouillon. Bring to a boil. Turn heat to low, cover and simmer for 20 minutes.

Oh man- I am going to try this tonite! Usually my husband makes it once a month or so but he is in mexico this week and he never tells me measurements which is what I need and he never uses. LOL
