Spanish Rice 101

Spanish Rice

Ingredients:

  • 1 cup Basmati white rice (you can use any white rice but I find that Basmati gives this a nice flavor)
  • 1-2 Roma tomatoes (depending on size of tomatoes and how much tomato flavor you like), cut into large chunks 
  • 1/2 medium size onion, cut into large chunks
  • 2 garlic cloves
  • 2 tsp of chicken bouillon (my favorite is Knorr's Caldo de Pollo)
  • 2/3 cup of water + 1 cup of cold water
  • olive oil

Directions:

  1. In medium size bowl/container, blend tomato, onion, garlic cloves and 2/3 cup water.  Set aside.
  2. Brown rice in small amount of olive oil.
  3. Add liquid mixture to rice and heat until liquid mixture is absorbed into rice, stirring occasionally. 
  4. Once liquid mixture is absorbed into rice, add 1 cup of cold water and chicken bouillon.  Bring to a boil. Turn heat to low, cover and simmer for 20 minutes.

Oh man- I am going to try this tonite! Usually my husband makes it once a month or so but he is in mexico this week and he never tells me measurements which is what I need and he never uses. LOL
Looks yummy and I have all the ingredients!

I was just wondering what type of meat would you serve with this??
