From Massachusetts to Maine...  

If you’re foodies as we are, we often structure our vacations around mealtime, with each meal becoming an event unto itself rather than a quick means to satisfy hunger. Each summer camp visiting day pushes us to search for the perfect New England lunch: a succulent lobster roll with a side of cole slaw or steamers, chased with a perfectly frosty root beer or tart lemonade.

This year’s sojourn yielded the following “best” list. Our suggestions for where to stay and w to do in the surrounding areas will help you build your own vacation around this New England favorite.

8 ounces cream cheese
4 ounces jam
1 loaf bread (sandwich sliced)
5 eggs
½ cup heavy cream
1tsp pure vanilla
Optional – cinnamon to taste

For the Marinade:

1/2 cup olive oil
¼ cup white wine
1 tablespoon chopped garlic

Combine all ingredients listed for marinade.

Pork Tenderloins

6 ounces per person

Spinach Salad

4 ounces Baby spinach
¼ cup mandarin oranges
¼ cup chopped smoked bacon
¼ cup toasted sunflower seeds
3 ounces citrus dressing

Place baby spinach leaves arranged on a chilled plate and topped off with the following above ingredients and then topped off with citrus vinaigrette. It may also be tossed with the spinach and the other ingredients.
