Spinach Salad
4 ounces Baby spinach
¼ cup mandarin oranges
¼ cup chopped smoked bacon
¼ cup toasted sunflower seeds
3 ounces citrus dressing
Place baby spinach leaves arranged on a chilled plate and topped off with the following above ingredients and then topped off with citrus vinaigrette. It may also be tossed with the spinach and the other ingredients.
Citrus Dressing
1 cup balsamic vinegar
½ cup Triple Sec (non-alcoholic)
½ cup orange juice
½ cup pineapple juice
½ quart olive oil
Combine all of the above ingredients until well blended and let sit for approximately 15 to 20 minutes before serving.
