California provides 88% of the nation's strawberries, and the region is experiencing an incredibly bountiful harvest this year. With over 35,000 acres of fields across California, the growers will be picking nearly 6 million crates of delicious, ripe strawberries this week to deliver to grocery stores nationwide.
So, wondering how to best take advantage of all these strawberries? Whether it is making fresh strawberry shortcake for a backyard barbeque, dipping them in whipped cream, or just grabbing some as a quick, sweet afternoon snack, strawberries remind us of long, sunny summer days.

Strawberry Brownies
12 medium strawberries
1 medium ripe banana
2 beaten eggs
1/3 cup water
20 ½ oz. pkg. brownie mix (with or without walnuts, your preference)
¼ cup cooking oil
Frosting
8 oz. strawberry cream cheese
1 ½ cup sifted powdered sugar
Remove stems and hulls from strawberries; mash together strawberries and banana and set aside. In a large mixing bowl stir together eggs, brownie mix, water and oil just until moistened. Stir in strawberry mixture. Pour into a lightly greased 9”x13” pan. Bake at 350 degrees for 25-30 minutes or until springs back when lightly touched. Cool.
Frosting: Cream together cream cheese and sugar for the frosting.
Makes 40 bars.
White Jell-O with Strawberries
8 oz. cream cheese
½ cup sugar
½ tsp. vanilla
½ cup milk
1 envelop unflavored gelatin
¾ cup water
½ tsp. lemon juice
8oz. cool whip
Blend together cream cheese, sugar and vanilla. Gradually add milk and lemon juice. Dissolve gelatin in double boiler with ¾ cup cold water and heat to boiling, stirring frequently to dissolve all gelatin. Add gelatin mix into cream cheese mixture. Fold in 8 oz. cool whip. Chill. Decorate with strawberries and serve!

1 (18.25 ounce) package strawberry cake mix
2 eggs, beaten
1/2 cup chopped fresh strawberries
1 cup whipped cream
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, mix together the cake mix, eggs and strawberries until well blended. Fold in the whipped cream until well blended. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes bbefore removing to a wire rack to cool completely.

Easy Strawberry- Banana Shortcakes
1 package shortcakes- in Produce Dept
1 LB. strawberries
3 ripe bananas
1 can Redi-whip whipped cream (we like Extra creamy!)
Nestle Quik Strawberry Syrup
4 oz of chopped pecans (optional)
Slice strawberries and bananas. Arrange shortcakes on a large platter. Drizzle shortcakes with the Nestle Quick Strawberry Syrup. Next, add strawberries and bananas, and generously top with whipped cream. Put pecans on top. Place in fridge until ready to serve.

1 pound of fresh strawberries

1 package of strawberry gel
Slice strawberries in 1/4s, rinse well, add gel and sugar, mix together until well blended. Pour into graham cracker crust, and chill in refrigerator until ready to serve.

10 Strawberries (More if you'd like)
1 1/2 Cups Milk
Ice as needed
Blend all together in a blender and serve. Add more ice cream to thicken or more milk for a thinner smoothie. Enjoy!

Mix 2 cups crushed pretzels with 3/4 cup melted butter and 2 tsp sugar. Press into bottomo of 9X13 baking pan; bake at 400 degrees for 8 minutes. Set aside to cool.
Mix 8 oz cream cheese with 3/4 cup white sugar; fold in 4 1/2 ounces whipped topping and spread over cooled pretzel mixture.
Mix 6 ounce package strawberry gelatin with 2 cups boiling water and 2 (10 ounce) packages frozen strawberries; cool 15 minutes then pour over cream cheese mixture. Refrigerate at least 4 hours.

1/4 cup lemon juice
1 pkg powdered pectin

Crush strawberries; place in large saucepot. Combine chopped rhubarb with berries. Add lemon juice and pectin. Bring to a rolling boil over high heat. Add sugar; return to a rolling boil. Boil hard 1 minute, stirring constantly.
Pour hot into hot jars, leaving 1/4" head space. Wipe off the rims of the jars, add a lid and ring.

1/2 cup sliced strawberries
3 tbs balsamic vinegar

1/2 medium shallot
1/2 clove garlic, peeled
1 cup olive oil

This delicious make-ahead brunch is always a big hit, and it is great for a crowd.
FRENCH TOAST:
1 Loaf Sourdough cut into 1-inch cubes
16 oz. cream Cheese
1 dozen fresh eggs
2 cups milk
1/3 Cup maple syrup
1 cup strawberries
optional spices to taste: vanilla, nutmeg, cinnamon
STRAWBERRY SAUCE:
1 cup sugar
2 tablespoon cornstarch
1 cup water
1 tablespoon butter
1 cup strawberries
Spread half of the bread cubes in a greased 9x13 inch glass baking dish. Spoon out the cream cheese into balls and distribute it evenly. Add strawberries, then top with a second layer of bread. In a large bowl, blend eggs, milk, syrup and any optional spices, and pour into the dish. Cover and refrigerate several hours or overnight. When ready to bake, cover dish with foil, and bake at 350* for 30 minutes. Remove the foil and bake uncovered for 20-3o minutes until the top is golden

4 quarts strawberries, washed and hulled
4 cups lemon juice
3 quarts water
6 cups granulated sugar
Directions:
Puree strawberries in a blender, food processor, or food mill. For a clearer lemonade, extract juice from strawberries using a juice extractor. Place strawberries in an 8 quart or larger pot. Add lemon juice, water, and sugar. Place mixture over medium heat and heat to 165 degrees F, stirring occasionally. Do not boil.
Remove from heat and skim off foam with a metal spoon. Quickly ladle hot juice into clean jars, leaving 1/2 inch head space; seal. Process in boiling water water bath for 15 minutes. Yields 6-7 quarts.
Just a hint, if you drink this as is from the quart jar, you will be left with a permanent pucker! I fill a plastic Koolaid-type pitcher with ice and pour the lemonade over this to allow it to dilute.

1 pint strawberries - cleaned and hulled
1 1/2 C. sugar
4tsps. fruit pectin
Mash strawberries into a bowl. Stir in sugar and pectin. Microwave on high until mixture comes to a full boil, about 5 minutes, depending on your microwave. Reduce setting on microwave to medium power and microwave 5 minutes more until mixture thickens. Pour into glass jars and cover with plastic wrap. Keep in the refrigerator.

Add the limeade concentrate and the 7-Up and stir until concentrate is disolved. Place the sliced limes and strawberries in the jar and refridgerate 15-20 minutes before serving.

2 cups self-rising flour
1/2 cup butter or margarine
2/3 cup buttermilk
Cut butter into flour. Add buttermilk and stir. Bake at 450 for 10 minutes.

1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon vanilla extract
2 sliced strawberries
In a saucepan, stir together the sugar and water. Bring to a boil, and cook for about 10 minutes, or until it becomes syrupy. Mix in the nutmeg and cinnamon, and remove from the heat. Stir in the vanilla. Allow to cool for a few minutes, then pour over sliced strawberries.
Split biscuits lengthwise; place the bottom halves on plates. Top with about 1/3 cup strawberries/syrup and whipped cream. Replace biscuit tops; spoon about 1/3 cup strawberries/syrup and more whipped cream on top. Serve immediately.

2/3 cup water
1 teaspoon vanilla extract
1 cup sifted all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder

In a medium mixing bowl, sift together flour, the 2 tablespoons sugar, the baking powder, and salt. Cut in butter with pastry blender or fork until mixture is crumbly. Add milk and stir just until dry ingredients are moistened. Place strawberries in a 1 1/2-quart casserole dish; pour hot sugar mixture over strawberries. Immediately drop dough evenly in 8 to 10 spoonfuls over strawberries. Sprinkle dumplings with the remaining 1 tablespoon of sugar. Bake 450° for 20 min

Strawberry Cheesecake Sundae
Strawberry sauce
1quart cut strawberries
1/2 cup -1 cup sugar (according to taste)
1 cup water (not needed if using frozen strawberries)
2 tbs cornstarch
Cook over medium heat until all have mixed and has thickened
Put a scoop or two of vanilla ice cream over cheesecake slice. Pour strawberry sauce over both. Top with whipped cream and a maraschino cherry! Enjoy!

This is a recipe for my Great Grandma's Strawberry Cake. It is absolutely the best cake I've ever had. I hope everyone can make this and enjoy.
Cake:
Dissolve :
1 small pkg. strawberry Jello (3ozs)
½ cup warm water
Set aside and mix the following:
1 box white cake mix – Pillsbury Moist Supreme,
or Betty Crocker or Duncan Hines,etc.
3 Tbls. plain flour
4 eggs
¾ cup veg.oil
½ cup sliced, sweetened, frozen strawberries – thawed
Mix 2 min. or as cake box directs
Pour into Bundt pan, greased & floured – bake 40 min. 350 degrees
or 2 round pans – sprayed with Pam for 28 to 30 min. 350 degrees
or until toothpick inserted comes out clean
Frosting:
Mix:
1 lb. pwd. sugar or 1 box
½ stick margarine, softened
Add enough strawberries & juice to thin – approx. 1 to 2 Tbls.

Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.

1 12-oz package chocolate chips (your favorite- dark, white, semi-sweet, milk, any brand)
2 pounds fresh strawberries (any size will do- small are best for kids, adults prefer the large ones)
Rinse the strawberries, removing any bruised or rotted ones. Place separately on a plate or tray lined with paper towels and gently pat dry. Prepare a tray such as a cookie sheet by lining with wax paper and set next to t he berries. Clear a spot in your refrigerator to accomodate the tray when full.
Pour the chips into a plastic bowl and microwave on 50% power for 2 minutes, stirring every 30 seconds until melted. Working quickly, dip the berries one at a time and lay on the waxed paper to cool. Do not let the berries touch. Stir the chocolate after about every 10 berries to keep smooth & melted for dipping. Refrigerate to set, enjoy!

Your kids will love this refreshing summer treat that's a healthy way to get 5 a day!
12 oz. fresh spinach
1/2 cup chopped and toasted pecans
1/4 c. olive oil
2 tsp. red wine or balsamic vinegar
2 tbsp. chopped red onion
1 scant tsp. salt
1 pint (or more!) sliced strawberries
Wash and dry spinach and place in fridge. Mix all ingredients except pecans and strawberries. Mix well. At lunch or dinner time, gather all ingredients from fridge. Tear spinach into bite size pieces and toss the spinach with the dressing and with the strawberries. Plate your salad and top with pecans.

My Kids Love this Cake!
Box of White Cake Mix
1 small jar of Strawberry Jam
1 small container of cool whip
1 tub of vanilla icing
1-lb of Strawberries
Heat oven to 350
Bake cake as the box instructs into 2 round cake pans, removed the cake out of the oven and let cool. After the caked is cooled cut each cake in half so you have 4 layers (you dont have to do this if you dont want to), microwave or heat the jam just to thin about 15 seconds then spread 1/2 on top of the bottom layer then slice the strawberries and lay 1/2 of them on top of the jam repeat w/ the next layer and repeat when you add the last layer, fold the cool whip and the icing into a bowl and spread over cake and then garnish w/ strawberries as you like!

Here's a great way to incorporate strawberries into a quick lunch or dinner:
Pork Chops and Apple-Strawberry Sauce
1/4 cup sliced strawberries
1 tbsp. strawberry jam
1 cup applesauce
1 tbsp. sugar
1 and 1/2 tsp. vinegar
Salt and pepper to taste
1 cup chopped red onion
3/4 cup ketchup
3 tbsp Worcestershire
Mix all of the above well and set aside. Brown 4 to 6 pork chops (sauce will make enough to serve 4-6) in a skillet, then add mixture to pork chops. Bake at 325-350 degrees for 45 minutes. Strawberries will roast in oven, giving a nice contrast to the savory pork!

This recipe, over 100 years old, is the best Strawberry Pie that I have ever tasted! It was originally passed down to my husbands grandmother from a family from New York who used to summer here in midcoast Maine. I love the simplicity and versatility of this recipe. Enjoy!
Strawberry Pie
Ingredients:
4 c. prepared berries (1 1/2 quarts whole)
6 T cornstarch
1 c. sugar
1 1/2 c. water (1 c. if using frozen berries)
Directions:
In pot cook water, cornstarch and sugar until it boils, stirring constantly. Add half of berries, cook until mixture is thick and bright in color. Let cool. When cool, add rest of berries that have not been cooked. Pour into cooled baked pie shell, cover with plastic wrap or waxed paper and refrigerate for 3-4 hours. Serve cold with whipped cream.

1 cup strawberries, sliced
1/2 cup milk
1/2 cup water
1/4 cup sugar)
2/3 teaspoon vanilla extract
Add strawberries to a blender or food processor
Add remaining ingredients.
Blend until smooth.
You can also omit the water and add a few ice cubes instead.

24 large strawberries
12 ounces cream cheese, let sit till room temperature
1 teaspoon vanilla
3 tablespoons powdered sugar
1/2 cup almonds or pistachios, finely chopped
Place cream cheese in a bowl, and microwave up to 30 seconds, till soft.
Whip together the cream cheese, vanilla, and sugar.
Using a sharp knife, make a hole In the center of each strawberry as deep as you can without going out the bottom.
Spoon or pipe the filling into each hole. (A baggie with the corner cut off works great!)
Dip the filled end of strawberry into chopped almonds or pistachios, making sure you completely cover the filling with the nuts.
Chill and serve.

3 cups sliced strawberries
1/4 c. sugar
1/4 c. Amaretto or 1 teaspoon almond extract
3/4 c. sour cream
2 tablespoons sugar
1/4 teaspoon cinnamon
6 6-inch flour tortillas
2 tablespoons melted butter
2 teaspoons sugar
1/4 teaspoon cinnamon
2 tablespoons sliced almonds, toasted
1 tablespoon shaved semisweet chocolate
Stir berries, 1/4 c. sugar & Amaretto in a bowl;
Cover & refrigerate for at least 1 hour.
Stir sour cream, 2 tablespoon sugar & 1/4 teaspoon cinnamon in a bowl; Cover and refrigerate.
Preheat oven to 400 degrees.
Lightly brush 1 side of the tortillas with melted butter & cut into 6 wedges and arrange on ungreased baking sheets.
Sprinkle evenly with 2 teaspoon sugar & 1/4 teaspoon cinnamon
Bake 6-8 minutes, until crisp.
Drain berries
Top each tortilla wedge with berries and a little of the sour cream mixture. Then sp

Ingredients:
8 Cups Romaine lettuce
1 sliced red onion
8 oz crumbled Feta cheese
1 C toasted pecans or walnuts
2 C strawberries, cut in half
Dressing:
1/3 C raspberry vinegar
1 tsp salt
1/2 c sugar
1 tsp dry mustard
1 c vegetable oil

1/3 c powdered sugar
Strawberries
1. Whisk heavy cream and sour cream. Chill covered for 2 hours.

1 peach, pitted, peeled and diced
1 kiwi, peeled and diced
1 cup raspberries
2 cups strawberries, diced
1 cup blueberries
1 tablespoon white sugar
1 tablespoon brown sugar
3 tablespoons blackberry fruit preserves
Instructions:
In a large bowl, combine fruit with sugars and preserves. Allow to chill 1 hour before serving. Serve with cinnamon tortilla or pita chips.

STRAWBERRY LEMONADE:
1 qt fresh strawberries
1 (12-oz) can frozen lemonade 2 c cold water
1 T grated lemon zest, optional
Mint sprigs for garnish
DIRECTIONS:
Rinse strawberries, cap and slice in halves. In a blender or food processor, puree strawberries and lemonade. Add cold water and continue to mix. Pour in glasses and garnish with mint sprigs. Yield: 6 servings.

Strawberry Kiwi Salsa
Salsa:
One cup chopped strawberrys
Two kiwi-chopped
One granny smith apple-chopped
1 Tbsp brown sugar
1/4 tsp lemon juice
(More or less of each as you see fit)
Chips:
Twelve 6 inch flour tortillas
Cinnamon/sugar mix
Drag tortillas through water; sprinkle with cin/sugar mix; cut into pieces; bake in 350 degree oven for 4 minutes or more; may come out slightly soft - chips will crisp up upon standing. Orig. recipe from the newspaper said to bake at 400 for 10 mins, but mine burnt to a crisp! I came up with the 350/4-5 mins by trial and error.
I doubled the recipe on the salsa twice to make enough to fill those two containers; I also used 24 tortillas (cutting each into 6 pieces)

Strawberries & Balsamic Vinegar
This is heavenly! - You'll love seeing the surprised look on your guests faces after they take the first bite.
Fresh strawberries, washed, hulled or unhulled, and dried
1/2 cup good-quality balsamic vinegar
1 cup powdered sugar
Place strawberries, balsamic, and powdered sugar in separate bowls.
To serve, let each guest dip a strawberry into balsamic vinegar and then into powdered sugar.
